Christmas

Christmas is a Christian holiday held on December 25 which celebrates the birth of Jesus. Eastern Orthodox Churches, which use the Julian Calendar to determine feast days, celebrate on January 7 by the Gregorian Calendar. Both dates are merely traditional and neither is thought to be the actual birthdate of Jesus.

The word Christmas is derived from Middle English Christemasse and from Old English Cristes mæsse.[1] It is a contraction meaning "Christ's mass". The name of the holiday is often shortened to Xmas because Roman letter "X" resembles the Greek letter Χ (chi), an abbreviation for Christ (Χριστός).

Christmas in Oregon

As our first Christmas in Oregon approaches, the feeling is, well, different. So used to the snows of Montana, this Christmas is filled sunshine, walks on the beach and the lack of old man winter.

And I love it. Sure, I miss the sprinkling of white on a cold crystal morning; seeing your breath fog; hearing the crunch as you walk through the snow. All these wonderful memories are, well, wonderful. Now, new memories are forming. The sound of waves crashing on the beach during a storm; watching the mist swirl by your house on cool foggy mornings; sitting on the beach watching the sun set on a calm, cool ocean.

Christmas is a time of remembering. Long after the toys and games have been put away. Take the time this holiday season and share memories.

Honey Pumpkin Pie

What is Thanksgiving without the traditional Pumpkin Pie? Warm from the oven, the smell of cinnamon and cloves fill the room as family and friends gather together to celebrate and give Thanks.

 

Ingredients

1 can (16 oz.) solid pack organic pumpkin
1 cup Michigan evaporated low-fat milk
3/4 cup Michigan honey
3Michigan eggs, slightly beaten
2 Tbsp all-purpose Michigan flour
1  tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. rum extract
Pastry for single 9-inch pie crust

Combine all ingredients except pastry in a large bowl; beat until well blended. Pour into pastry-lined 9-inch pie plate. Bake at 400° 45 minutes or until knife inserted near center comes out clean.
